Marinara Sauce

2 Tbs. olive oil

3 garlic cloves, minced

1 medium onion, finely chopped

4 cups oven roasted plum tomatoes with juices, diced

1 cup fresh Italian flat leaf parsley, chopped

½ cup fresh basil leaves, rolled and thinly sliced

Salt and pepper to taste

Heat pan on medium high heat and add olive oil, garlic, and onions.  Stir until soft; add remaining ingredients.  Stir occasionally and reduce heat to simmer for 10-15 minutes.  Serve over pasta, chicken, or fish.  30 minutes preparation time.  Makes 4 servings.
