Breakfast Fruit Salad
2 oranges, cut into small bits
1 banana, sliced
1 Tbs. dried ground coconut
Mix banana and oranges in a small bowl. Sprinkle with coconut. 10 minutes preparation time. Makes 1 serving.
Fruit Salad
2 fresh peaches, peeled and sliced (frozen if fresh is unavailable)
1 large apple, peeled and diced large
1 large pear, peeled and diced large
1 kiwi, peeled and sliced
¼ cantaloupe, cubed
2 cups watermelon, cubed
1 banana, sliced
¼ tsp. salt
¼ tsp. freshly ground pepper
½ tsp. ground cardamom
¼ tsp. ground ginger
Carefully combine all ingredients in a large bowl. Refrigerate for one hour. 1½ hours preparation time. Makes 6 servings.
